Egg Karai
    2 T. Vegetable Oil
    1 tsp. jira (whole cummin seed)
    4 cloves of garlic, chopped or pressed
    1 tsp. haldi (Tumeric)
    1/8 tsp. red pepper
    1 tsp. garam masala (curry powder)
    1 small piece of ginger root, peeled and chopped
    1/2 tsp. salt
    8 boiled eggs, cut into 6 large pieces
    1 large bunch (1 cup chopped) Dhunya (Celantro)
    1 pound (1/2 kg) ripe tomatoes, cut into chunks
    2 medium onions, diced
    1/2 c. Water

INSTRUCTIONS Heat vegatable oil in a wok or fry pan and then add Jira. At the first sign of the jira seeds popping mix in the remaining spices, ginger and garlic. Next add tomatoes, eggs, onions, dhunya and finally water as needed while frying and stiring. Fry for 10 minutes Serve over rice or with chapatis.
