Indian Tea (Chai)

    2 cups (1/2 litre) of water
    4 coarsly crushed cardemmon seeds (optional)
       (or a dash of ground Cardemmon)
    4 crushed cloves (optional)
    1-1/4" slice of fresh ginger (optional)
    4 small pieces of cinimon stick (optional)
    4 crushed pepper corns (optional)

    4 t. tea leaves (preferably Indian tea)
    4 t. sugar
    2 cups (1/2 litre) of whole milk

Add spices to water in a sauce pan and bring to a boil. Immediately add tea, sugar and milk in that order. Stir and bring to a boil, remove from heat, strain into teapot or individual serving glasses. Commonly served with crackers or simple cookies.
